Chocolate chip muffins



This is so far the best choc chip muffins I have tried using Thermomix.  Super easy steps, fast and soft.  Flour need not sift.  Good for quickie brekkie or tea break.  Whole process took less than 1 hour.  Most important thing for muffins is not to overmix.  Do not mix until it is a smooth batter.  

Makes 12

Ingredients:
150g      sugar
1 large egg ( 65gm) or can use 2×small new born eggs
250g        milk
90g          corn oil
1 tsp        salt
1/2 tsp    bicarbonate of soda
2 tsp         baking powder
250g         plain flour
2 tbsp       cocoa powder
200g         chocolate chips (150g to mix in batter, 50g for sprinkle on top of batter)

1.  Add sugar to clean dry bowl.  Mill.
       3s / speed 9

2.  Add in eggs, vanilla essence, milk & oil.  Mix.

       10s / speed 5

3.  Add in flour, cocao powder, choc chips, baking powder & soda.  Spread out all flour mixture in bowl. Mix.

5s / speed 4

The flour will not evenly mix in the bowl.


Use a spatula & lightly just incorporate the flour to batter.  You may see a bit of lumpyy & sights of little flour and yes...that should be the way.


4.  Pour onto muffins tray till brim.  Sprinkle choc chips on top of batter.

5.  Bake for 180 deg for 20mins. Let it cool beofre consume.
