Earl Grey Lavender Ice cream


Ingredients:
200g            whipping cream 
50g              milk
20g              sugar
2                  yolks
1/2 tsp        vanilla paste
3 teabags   Earl Grey tea
2 tsp             lavender

1.  Add 100g whipping cream& milk in mixing bowl.
      
3m / 90c / sp1

2.  Add in the tea bags and lavender to infuse.

2m /90c / r.  sp1
3.  Beat the yolks and sugar till pale yellow (hand whisk).

4.  Add in remaining whipping cream,vanilla paste & yolks . Cook till slightly thicken. 
    
 8m / 90c / sp2

4.  Squeeze dry the tea bags and throw away.  It is ok if the tea bags are broken.  Filter the mixture and remove all lavender and tea leaves.
5.  Fill up the mould and freeze overnight. 

Note:
1.  It can be kept in a container.  
      Popcisle is optional.

2.  It is ok if the tea bags are broken.  It will be filtered anyways.
