Glutinous Rice cake


This is super easy and super yummy. Is like 年糕...

Ingredients:

160g     glutinous rice flour
1            egg
45g       sugar ( or icing sugar)
30g        corn oil
145g      milk
50g       dried cranberries


1.  Preheat oven at 180 deg/fan 
      mode.   

2.  Add all ingredients.  

     15s / sp3
3.   Add in dried cranberries. Scrap down the flour at the side and mix using spatula.  
6.  Put baking paper on a 8 inch square baking tray (as long as the batter is only 1cm thick) . Pour batter into baking tray and bake for 35 - 45 mins or golden brown.
7.  Sprinkle top with snow powder & enjoy the dessert.

*Note: 
Do bake till golden brown to have the crispy texture of the outside.

You can use any baking tin ( I used 8" square) as long as the batter in the tin is only 1cm thick.  

You can add any of your favorite dried fruits such as cranberries, rasins etc. 

Non-thermomix way:

1.   Add milk, egg, sufarvsugar,   e 
      oil. Stir to combine.

2.  Add in flour and baking powder. 
      Stir to combine till no lumps.  

3.  Add in chopped fruits.  Mix well.

4.  Pour into baking tin and bake  at  
     180 deg for 35 mins.

5.  Sprinkle with snow powder &  
     serve.

I'm a busy working mum. Despite of the busy work, I hope to provide my family with home-cooked food whenever possible. I came across thermomix and it can fulfill my wish and also bring alot of cooking joy. I like to do research and development on baking and cooking. I am still trying to explore what it can do.
