Non-Thermomix recipe. Another dish to add to your dinning table if your thermie is fully utilized..😁
Serve 5-6
Ingredients:
1 Big Chicken (1.2kg)
1 Kaffir Lime Zest, grated
1 Lime Juice (from the Kaffir lime)
3 clove Garlic
3 tbsp olive oil
1 tsp Ground Black pepper
1 cup Kaffir-lime leaves
600 g mini Potatoes
1 pc Garlic bulb
1 pc lemon grass bruised
2 tsp Chicken Rotisserie powder/Chicken powder
2 tsp salt
1 tsp Paprika
Drizzle of olive oil, Fresh
Rosemary, Fine Sea Salt
1. Preheat oven to 210 deg, using grill & hot air function.
2. Mix all ingredients for marinade, then run each part of the chicken with the mixture. Stuff chicken with kaffir lime leaves & lemongrass - you can also place some leaves between skin & the breast for even more flavor!
3. Put chicken (lying at their side) in an oven-safe dish, with cloves of garlic & washed (but not peeled) baby potatoes around it. If the potatoes are big, cut them in wedges. Drizzle with olive oil, fine sea salt & rosemary.
4. Place oven-safe dish in the oven, medium rack. After 15 minutes or until the thighs are golden brown & crispy, turn the chicken on their other side & cook for another 10 to 15 minute until golden brown.
5. Reduce temperature to 160 deg. & cook for 10 more minutes with the back side up, then 5 more minutes with the breast side on top.
6.Switch off oven & allow to rest for 10 minutes
